Have a Local Food Party : Instead of counting time or distance, simply enjoy the pleasures of local food by organizing a potluck meal in which everything must be local. Keep your fingers crossed that someone will splurge on handmade goat cheese, and don’t forget some local wine, beer or juice. The South Beach Diet
The South Beach diet is a weight loss system created by Miami, florida-area cardiologist arthur agatston which encourages that one should eat "good carbs" instead of "bad carbohydrates" and "good fats" instead of "bad fats"
Doctor agatston developed his nutritional system for his cardiac patients, based on his detailed study of scientific studies completed on other weight loss regimes.
Good foods include, broiled ham, chicken breast, seafood, mozzarella cheese, pistachios, nonfat milk and certain vegetables, like butter beans, cabbage and water chestnuts.

10 lg Mushrooms, cleaned &

-quartered 2 md Zucchini, cut into 1"

-cubes 2 md Red Bell Peppers, seeded

--- cut 1" cubes 2 md Idaho Potatoes, scrubbed

--- cut 1" cubes 1 md Chopped Onion --

-coarsely chopped 5 ts Olive Oil

Salt & Freshly Ground -Pepper -- to taste Preheat oven to 425 degrees. In a large roasting pan, toss together all ingredients except salt & pepper. Roast for about 45 minutes, or until vegetables are nicely browned and potatoes are tender, stirring occasionally. Sprinkle with salt & pepper. Serve hot or at room temperature.
