The South Beach Diet
The South Beach diet is a diet created by Miami, florida-area cardiologist arthur agatston which encourages that one should consume "good carbs" instead of "bad carbohydrates" and "good fats" instead of "bad fats"
Dr. agatston invented his nutritional system as an aid to patients with heart conditions, as a result of his analysis of scientific research on other nutritional studies.
Approved foods include, broiled ham, skinless poultry, oysters, low or fat free cheeses, pistachio nuts, lowfat milk and some vegatables, such as chickpeas, cucumbers and snow peas.

1 qt Ripe strawberries

4 c Sugar

2 tb Lemon juice

1/2 Bottle of liquid pectin

Crush berries thoroughly. Place in a large bowl. Add sugar, mix well & let stand. Mix lemon juice & add certo. Stir until all sugar crystals are dissolved. Ladle quickly into jars & leave to set, it may take 24 hours. Store in freezer. Will keep in the fridge for 3 weeks. "The Settlement Cookbook"
