Buy Local Food : Cultivate an awareness of how far your food travels. When Rich Pirog, Food Systems Program Leader for the Leopold Center for Sustainable Agriculture at Iowa State University, tracked the miles traveled for 16 types of produce, he found that locally sourced fruits and vegetables such as apples, lettuce and tomatoes traveled an average of 56 miles, compared to 1,494 miles — nearly 27 times farther — for the same fruits and vegetables delivered through conventional retail channels. Things get stickier with combination foods, strawberry yogurt for example. Pirog came up with 2,216 miles by adding up the distance traveled for the yogurt’s milk, sugar and strawberries. That figure could be slashed by 90 percent if you buy plain yogurt and stir in some locally grown honey and fruit.

6 T Butter Or Margarine;Softened

2/3 c Sugar

2 ea Eggs; Large

1/4 c Milk

1 t Vanilla

1/2 c Flour; Unbleached

1 pk Chocolate Pudding Mix; *

1/2 t Baking Powder

1/4 t Salt

1/2 c Nuts; Chopped

1 x Powdered Sugar

* Chocolate pudding should be a 3 3/4 to 4 oz package of REGULAR pudding mix. ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ Cream butter and sugar. Blend in eggs, milk, and vanilla. Stir togethere flour, pudding mix, baking powder, and salt. Add to creamed mixture; mix well. Stir in nuts. Spread in greased 9 X 9 X 2-inch baking pan. Bake at 350 degrees F for 25 to 30 minutes. Cool. Sift powdered sugar over top, if desired. Cut into bars. Makes 24 brownies.
