The South Beach Diet
The South Beach diet is a diet plan started by Dr. arthur agatston which emphasizes the consumption of "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats"
Dr. agatston developed his system for people who have heart disease, based on his detailed study of scientific studies on other nutritional studies.
Examples of good foods include, canadian bacon, turkey bacon, clams, fat-free cheeses, almonds, eggs and some vegatables, such as asparagus, lettuce and sprouts.

1eachcarrot, in chunks
1eachgreen pepper, cubed
1eachonion, quartered
2tablespoontapioca, quick-cooking
4eachchicken breasts, boned
8ozpineapple chunks
1/3cupdark brown sugar, firmly packed
1/3cupred wine vinegar
1tablespoonsoy sauce
1teaspoonchicken bouillon, instant
1/2teaspoongarlic powder
2tablespoonginger-root, fresh, minced OR 2 tb candied ginger, chopped
1teaspoondried cilantro
1rice, cooked, hot

Directions:

For crockpot cooking: Put vegetables in bottom of crockpot. Sprinkle tapioca over vegetables. Place chicken on top of vegetables. Combine all other ingredients except rice in a small bowl. Pour over chicken. Cover crockpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave.

To cook in oven: Put vegetables in bottom of a greased pan. Sprinkle vegetables with tapioca. Add chicken to pan. Combine all other ingredients except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 degree oven for 2 hours. Serve over rice. Leftovers can be reheated in microwave.
