The Atkins’ Diet
First invented by doctor atkins in the 1960s, the atkins diet achieved most of its fame during the last decade. Although not accepted by all scientists, it supposedly allows fat reduction whilst allowing many foods that would not be part of a normal diet, such as lamb and butter.
With this diet you eat protein and fat, it is carbohydrates that need to be avoided. It is often referred to as a low carbohydrate/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

The Atkins’ Diet Theory
The logic behind the atkins diet is that if we eat less carbohydrates, we will deplete the fat we have stored and we will become thinner

3 oz Tomato paste

4 c Water or light vegetable

-stock 1/4 x Med. reg or green cabbage

-thinly sliced 2 ea Carrots, julienned

1 x Clove Garlic, minced

3 x Beets, julienned

1 md Onion, thinly sliced

2 c Apple cider

1/4 c Tamari

1/4 c Sherry

2 tb Molasses or honey

1 tb Dried dill

2 ts Dried basil

1 tb Caraway seeds

1 tb Canola oil

Saute caraway seeds in canola oil. Then, combine all ingredients in a soup pot. Bring to a boil, then lower heat and simmer 2-3 hours, stirring occasionally. Puree one-third of the soup in food proceessor; return puree to the pot and mix thoroughly. Serve hot or cold with a dollop of Tofu Sour Cream.
